Instructions

- Wash and cook the glutinous rice: Rinse the glutinous rice thoroughly and soak it in water for about 30 minutes. Cook the soaked rice until fully cooked. Allow the cooked rice to cool and spread it out evenly.
- Activate the nuruk: Dissolve the nuruk in lukewarm water and let it sit for about 10 minutes to activate.
- Combine the ingredients: In a large container, combine the cooked glutinous rice, chopped pine needles, water, and activated nuruk. Mix well.
- Fermentation: Cover the container with gauze or cloth and secure it with a rubber band. Make a small hole in the lid to allow air circulation. Place the container in a warm, sunny spot and let it ferment for 10-15 days. During fermentation, foam may form and pressure may build up, so be cautious.
- Second fermentation: Once the initial fermentation is complete, filter the liquor through clean gauze into another container. Add sugar to taste and dissolve it. Let it ferment for another 5-7 days.
- Storage: Transfer the liquor into clean bottles, seal them tightly, and store them in a cool, dark place.
