Cucumber Roll Sushi & Cucumber Crab Stick Salad: A Refreshing Summer Rice Dish

As the weather gets hotter, here's a perfect home-cooked meal that's refreshing and easy to make.

I'll introduce a sushi recipe using seasonal ingredients from June and July: cucumber roll sushi, cucumber crab stick salad, and corn rice.

Enjoy the summer flavors with fresh cucumber and sweet corn!

Ingredients

  • Cucumber Roll Sushi
    • 1 cucumber
    • 5 crab sticks (150g)
    • 1 sweet corn
    • 2 bowls of corn rice
    • Sushi vinegar (3T rice vinegar, 2T sugar, 1/2 teaspoon salt)
    • Parsley powder or sesame seeds (optional)
  • Crab Stick Salad
    • 1.5T mayonnaise
    • 1T lemon juice
    • 0.5T whole grain mustard
    • A pinch of pepper

Preparation

  1. Prepare Sweet Corn
    • Stand the sweet corn on a cutting board and use a knife to slice off the kernels. This method makes it easy to remove the kernels.
  2. Make Corn Rice
    • Add the corn kernels to soaked rice and cook with less water than usual, as corn releases moisture during cooking. Using a rice cooker to make small portions is also a good option.
  3. Prepare Crab Stick Salad
    • Shred the crab sticks and mix them with the corn kernels.
    • Combine with mayonnaise, lemon juice, whole grain mustard, and pepper. Adjust the amount of mayonnaise to your taste.
  4. Prepare Cucumber
    • Wash the cucumber with coarse salt and cut off the ends. Use a vegetable peeler to slice the cucumber into long strips. One cucumber will be enough to make cucumber roll sushi with rice from 2 bowls.
  5. Prepare Sushi Rice
    • Mix sushi vinegar into the cooked corn rice. If using regular rice, mix rice vinegar, sugar, and salt, and heat in the microwave until the sugar dissolves.
  6. Assemble Sushi Rolls
    • Shape small portions of rice and wrap them with cucumber strips. It’s okay if the rolls are a bit loose or if some rice is visible.
  7. Finish
    • Stand the wrapped cucumbers upright and gently press the rice with your thumb or index finger to shape them.
    • Top generously with the crab stick salad mixed with corn, and sprinkle with parsley powder or sesame seeds. You can also add wasabi to taste.
