How to Make Jeolpyeonjuk (Abalone Porridge)

Abalone porridge, also known as jeolpyeonjuk, is a hearty and nutritious Korean dish that is perfect for a quick and easy meal. It is made with abalone, rice, glutinous rice (optional), vegetables, and seasoned with salt, pepper, and sesame oil. Ingredients (Serves 2)

  • 2 abalone
  • 1 cup rice
  • 8 cups water
  • 0.5 cup glutinous rice (optional)

  • A small piece of ginger
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon sesame oil
  • Sesame seeds for garnish

Instructions

  1. Clean the abalone and remove the shell. Slice the abalone thinly.
  2. Wash the rice and soak it in water for 30 minutes. Drain the water. If using glutinous rice, soak it separately or with the rice and drain the water.
  3. Slice the carrot, chop the onion, mince the garlic, and thinly slice the ginger.
  4. Heat the sesame oil in a pot and sauté the garlic and ginger until fragrant. Add the onion and carrot and sauté until softened.
  5. Add the soaked rice and glutinous rice (if using) and stir-fry for a minute.
  6. Pour in 8 cups of water and bring to a boil. Add the abalone, salt, and pepper, and simmer for about 1 hour.
  7. Once the abalone is cooked through, garnish with sesame seeds and serve.

Tips

  • Save the abalone guts and clean them thoroughly. Add them to the porridge for a richer flavor and more nutrients.
  • Add anchovy sauce, shrimp paste, or kombu to the porridge for extra flavor.
  • Stir the porridge frequently while it is cooking to prevent the rice from sticking to the bottom of the pot.
  • You can also make jeolpyeonjuk with cooked rice. Add cooked rice to the pot with a little water, bring to a simmer, and add the abalone, seasonings, and sesame seeds.
